Help Those in Need
I've been to New Orleans probably a half-dozen times in the past ten years, and the people, the music, and the food always make me want to go back to experience it again. It saddens me beyond words to see what has happened there and throughout the rest of the Gulf Coast - the destruction, the loss of life, the sense of hopelessness. I truly don't know what to say, above and beyond that, except that I hope that the people who desperately need help receive it.
If you haven't already, please help with the relief efforts, either through the Red Cross or through Habitat for Humanity.

My Memories of New Orleans:
I've walked through the various cemetaries, taken the street car up St. Charles; I've had beignets and chicory coffee at Café du Monde, eaten at fancy Creole restaurants, had po' boys down by the levee, drank Abitas in a dive bar off Decatur, been served gumbo in the dark, locals-only places well off the beaten track, and have tried to bring some of what New Orleans means to me to my cooking.
For now, just read the recipes. Donate the money you'd spend on the ingredients to the relief efforts. Once those in need are taken care of, have a evening of New Orleans' food as a fundraiser.
